Crafting our Spirit

The best things in life come from somewhere, they have a history and tell a story. They are shaped by the geography, geology, culture, and climate of a specific place. The people making it can’t help but add their own experience, intention and energy to that shape. If they are any good at it, they know to keep the human touch light, let nature shine through and the story be told. The French call this story “terroir”. Once upon a time everything we consumed had such a sense of place and terroir.

Imagine a palette of botanicals, each with their own seasonal variations, strengths of flavor, and local characteristics, coming together in the process of distillation to produce a concentrated product that is the ultimate brilliant ingredient for further experimentation, blending and artistry. This is Gin. Gin is awesome. We as producers are humbled at the possibilities of where our Gin can go.

The arid tropical forests and shorelines of Antigua grow an incredible range of exotic and delicious flavors. Primarily made from this tropical treasure trove of botanicals, our Gin also includes juniper from more temperate climates sourced abroad.

Our spirits start out as pure cane sugar wash fermented with wine-makers yeasts. Our wash is distilled in a small hybrid pot to prevent the loss of distinctive characteristics, taste and texture.

The first distillation yields a clean and flavour-ful rum that cries out for barrel aging. A second distillation purifies this spirit into a neutral spirit, technically a vodka that tastes very clean and holds onto much of its viscosity and body or mouthfeel. One last distillation in the presence of our proprietary blend of botanicals produces a concentrated delicious gin ready for blending and artistry. Diluting this spirit with pure Atlantic rain water results in the desired final proof and intensity.

From foraging and harvesting botanicals, to bottling and labeling each bottle, and everything in between, every bottle we produce represents a labour of love and tells a story that we hope you will savour and enjoy.
